Brazilian Lime Mousse
Last week I received a big basket containing Brazilian limes. Brazilian limes are in season throughout the year. They are a great way to add freshness and texture to your cooking, as well as being a healthy way to flavour dishes.
Brazilian limes are completely seedless and tend to be lighter green in colour. They are known for having thin skins, which makes them much juicier.
I use limes everyday for salad dressings, sauces and in drinks.

Here is another easy recipe to sweeten life:
Brazilian Lime Mousse
Ingredients:
Serves 4 generous portions
1 can of condensed milk
1/2 cup of fresh lime juice (about 6 limes)
3 egg whites whipped to stiff peaks – make sure the eggs are organic and fresh
Method:
- First prepare the eggs whites: First of all, make sure that your equipment (mixer and bowl) is grease free. Add the egg whites to the clean bowl of your mixer, beat the egg whites for 5 minutes till they are nicely fluffy and stiff peaks. reserve.
- Mix very well the condensed milk and the fresh lime juice to a double cream consistency.
- Add the stiff egg whites slowly to the lime mixture.
- Ddish out into cups and leave to chill for a least 3 hours
